I like one dedicated for all my sites instead of many cheaper shared hosting.. sure it's cheaper but you get no control!

You get a lot of control. I'd rather have one dedicated as well though.
That way, I get complete control. I also don't like shared hosting though. I checked up on one of my hosts and they have exactly 599 other sites hosted on their server and it grows daily.
